Running a Big Smoke pub is every pub manager’s dream! You will have responsibility for driving a growing and profitable business through choosing beers, wines and spirits that suit your business, developing fresh food menus and building a team of enthusiastic, engaged & professional people.

To be a Big Smoke Manager you’ll need a passion for outstanding customer service & knowledge of all drinks and classic pub food. You’ll need to be entrepreneurial at heart with proven financial expertise and business acumen. Most importantly of course, you’ll need to be a natural and charismatic host & leader, enjoy looking after people and be able to build & maintain a successful and happy team.

Assistant Manager

As an Assistant Manager or Supervisor you’ll be a key member of the pub management team and will share responsibility for the day to day running of the pub. You will also assume responsibility when the manager is not on the premises with the help of the rest of the management team.


We look for outgoing, friendly people who have a genuine interest in our business and a willingness to take advantage of all the learning opportunities that we provide. Previous experience is always helpful but not essential, as long as you enjoy looking after people and have some flexibility to work during busy lunchtimes, evenings and weekends we would like to hear from you. We are very flexible and try to work around people’s commitments … whether you’re looking for part time or full time hours, we’re sure you’ll enjoy working for us.

Head Chefs

The Head Chef role provides a great deal of autonomy and as part of the pub’s senior management team you’ll play a truly influential role over the performance of the business. Together with the manager you’ll develop seasonal menus and be responsible for locally sourcing fresh ingredients from the best suppliers, and negotiating the best deals available. As well as being involved in a hands-on cooking role you’ll also undertake a wide range of management duties and will ensure that food safety standards and procedures are second to none whilst building, leading and motivating a happy team with a strong emphasis on training and developing junior chefs.

Sous Chef

Our Sous Chefs work very closely with the Head Chef to ensure the smooth running of a busy kitchen; cooking and working across all sections together with the opportunity to make a significant input in the menu development process with your own ideas for interesting, seasonal dishes in line with our food philosophy.

Chef de Partie

Our Chefs de Partie have the opportunity to gain experience working across all areas of the kitchen. On a daily basis you’ll be supporting the Sous Chefs and Head Chef in a range of duties including fresh food preparation and cooking as well as undertaking kitchen management duties including ordering, stock control and ensuring food safety and cleaning standards are met.

Commis Chef

We see our junior chefs as our Head Chefs of the future and we have lots of opportunities at Commis Chef level.
